Vegetarian Chili - Recipe
Veggie Chilli – shopping list (for about 6 people)
Olive oil (1 tbsp)
Vegetables
1 medium onion. Diced, about 1/2 inch in size
1 small sweet potatoes, baked and cut into large bit sized pieces (do not overcook)
1 small eggplant (or 1/2 medium eggplant), cut into bit sized pieces
1 bell pepper. Cut into 1/2 inch square pieces
1 tsp finely chopped garlic
Canned goods:
Red kidney beans (1 can)
White kidney beans (1 can)
Whole kernel corn (1 can)
1 can of diced tomatoes (19 oz)
1 tbsp tomato paste (to thicken)
Spices:
Cumin (1 tsp)
Cinnamon (1/4 tsp)
Allspice (1/4 tsp)
Salt. (To taste)
Oregano. (1 tbsp)
Black pepper (1 tsp)
Optional for spicy recipe:
Cayenne Pepper (to taste)
Hot pepper flakes
Serve with:
Sour cream. (Optional)
Buns
Nacho chips (optional)
Method:
1. Add 4 tbsp olive oil to a pot and heat oil on high heat
2. Saute onions
3. Add bell peppers and eggplant
4. Continue cooking for about 5-10 minutes.
5. Add garlic.
6. Add can(s) of crushed tomatoes.
7. Drain the red and white beans. Rinse with some water.
8. Add beans to mixture.
9. Add canned corn to mixture
10. Add spices (cumin, oregano, all spice, cinnamon, etc…) and taste.
12. Heat up until bubbling (stirring constantly). Turn heat to LOW and simmer for at least 45 minutes. Adjust flavour with more spices, if necessary
13. Add sweet potatoes, and tomato paste until thick enough.
Serve with sour cream and bread. Tortilla chips adds a nice touch too!
